Chefs to pairing knives and all in between..I started with a pairing knife that you could not cut yourself with it after about 5 min it was better than brand new. Effortless in cutting a piece ov note book paper. Went thru a very ripe tomato effortlesslyand paper thin slices. I continue to do all of my knives in under an hour.
